Vegetable Barley Soup


Vegetable Barley Soup

  • 2 Quarts of beef broth or 2 packs of McCormicks AuJus with 7 cups water mix
  • 1 15 ounce can whole tomatoes
  • 4 cups potatoes diced
  • 3 carrots peeled and diced
  • 1/2 onion diced
  • 2 celery stalks diced
  • 1/2 cup dry barley
  • 2 cups diced cabbage
Okay so add in liquid in pan on medium...
Then throw in all the veggies...
Then the barley
Place lid on top and cook for an hour or longer until veggies are tender.
Enjoy!

Marinated Chicken Breast Cordon Bleu Hoagie

~Chicken Cordon Bleu Hoagies~

4-3 ounce chicken breasts....If chicken breast are gigantic... cut them in half width wise

4 slices Sargento or any other brand of baby Swiss

4- Hoagie buns...I used IGAs fresh baked but also like Sweetheart Sub Rolls

4 slices of black forest ham

1/4 c.-Dijon mustard

lettuce

tomato

mayo

1/2 cup Olive Garden Dressing( found this at Sam's Club believe it or not)

1. Trim chicken breast and place in a gallon bag with Olive Garden dressing marinade all day or overnight/or a couple hours...

2. Heat grill to 400 and place chicken breasts on grill and cook until done

3. When chicken is done smear some Dijon on the chicken and place a slice of black forest ham on top and Swiss cheese...

4. Remove chicken and place split buns on grill to toast up for 30 seconds roughly and assemble sandwich to ones liking.

Brooklynns Taco Salad

Tonight was another birthday in my house!!! My oldest turned 7 and decided on the good ole indulgent taco salad as her birthday meal. So here it is Brooklynn style:)



Brown 1 pound of ground beef add in a packet of taco seasoning, then add in a can of drained kidney beans light or dark; doesn't matter. After the beef is completely browned beans are heated and it smells good, then start assembling. Place tortilla chips down, we did half Doritos and half plain as our base, then meat mixture, cheese, lettuce and veggies and then our famous taco dressing. Enjoy!



Taco Dressing

1/2 cup Hidden Valley Ranch

1/2 cup Medium Pace Salsa

1 dollop of sour cream

Mix and enjoy!!!

Beer Can Chicken

 
 
Beer Can Chicken

So simple way to make a chicken as good as a store bought rotisserie.... Turn your BBQ on high on outside burners...2 middle should be off or on very low to prevent flare ups.... Let it heat up...In the meantime clean and pat dry your chicken and oil it and season it according to liking... the oil is going to help create that beautiful brown crust...If you don't eat the skin then don't worry about the calories...If you eat the skin well a little oil isn't going to phase your system then. Take a large beer can 16 ounce I used and dumped half of the beer out...you wont taste the beer so don't fret it...but if all else dump the beer out and add herbs and chicken broth in the can. Then place beer can on grill place chicken over the beer can like you see and I use the top rack to lean chicken on and rest the wings ...it looks funny but the taste in phenomenal! I let it cook for an hour at 450-500. My BBQ has a built in thermometer. When the thickest part of chicken (thigh area and breast I read) reads 170-180 I pull chicken off and rest 10 minutes on a big plate. After resting if you pull wing it should just separate from joint easily..another way you know chicken is done... and pull leg and the leg and thigh should just come off carcass easily with a slight pull. Then cut breast off and serve. Be great way to have a chicken mashed potato meal in the summer without heating the house. Enjoy!

Taco In a Hurry

4 bags of fun size Nacho Cheese Doritos
1/2 pound of taco seasoned warm ground beef
2 cups shredded cheese
lettuce
diced tomatoes
salsa
sour cream
and any other taco toppings you enjoy!

1. cut bag of chips open along the side lengthwise of the bag
2. put beef on the chips
3.Then the cheese
4. Then all your veggies/condiments and any other toppings!
5. Enjoy! KIds can be active in making their own dinner! and its fun!

Heavenly Italian Pasta Salad

5 cups cooked and cooled Tri Color Wacky Pasta or anyother you prefer
1 cup halved cherry tomatoes
1/2 cup chopped marinated artichokes
10 black olives sliced
1/4 cup shredded parmesean cheese
1 cup cooked cooled asparagus diced up
3T diced red onion
1 cup Olive Garden Salad Dressing ( found at Sams Club)
1/c cup julienned pepperoni slices
1. Mix everything together
2. Cover and chill for an hour then serve:)

Mock Sorbet/HomeMade Fruit Bars

1 cup frozen berries, fruit or mangos
1/2 cup to 1 cup orange juice

Place half juice in blender and add the fruit in, then add more liquid until fruit is blended very well.

Freeze or eat immediately!! or place in popsicle forms and enjoy a great summer treat!
